Korean artist Ju Hyun Lee is leading an exciting experiment with us. Her project is to explore local alternatives to sugar, vanilla and coffee, three products that seem indispensable in our daily lives but whose mass production is far from neutral for the planet. As well as sober methods of processing and preserving them.
On the menu for this session: a gourmet cake flavoured with local flowers and alternative sugar.
